White Bean Potato Soup

Ingredients
  

  • 3 tbsp Olive oil
  • 1 large Onion diced
  • 2 medium Carrots peeled and diced
  • 3 ribs Celery diced
  • 6 cloves Garlic minced
  • 1 pound Yukon Gold potatoes peeled and cut into cubes
  • 3 15 ounce Canned Great Northern beans drained and rinsed
  • 2 quarts broth vegetable or chicken
  • 1 1/2 tsp Lemon zest
  • 1 1/2 tsp Dried tarragon
  • 3/4 tsp Kosher salt
  • 5-6 leaves Kale chopped into small pieces
  • Freshly ground pepper

Method
 

  1. In a large pot, heat olive oil over medium heat Add onion, carrots and celery, sauté for 5 minutes.
  2. Add garlic and cook for 1 minute. Add potato, beans, lemon zest, tarragon, salt and ground pepper. Simmer for 15 minutes, until the potatoes are tender.
  3. Stir in kale and cook until wilted.
