- In a large pot, heat olive oil over medium heat Add onion, carrots and celery, sauté for 5 minutes.
- Add garlic and cook for 1 minute. Add potato, beans, lemon zest, tarragon, salt and ground pepper. Simmer for 15 minutes, until the potatoes are tender.
- Stir in kale and cook until wilted.
