Instant Pot Cuban Black Beans
Ingredients
- 1 pound black beans - dried sorted and picked through for broken beans, stones
- 1 tbsp Extra Virgin Olive Oil
- 1 cup Onion, chopped about 1 medium
- 1 cup bell pepper Red, orange or yellow, about 1 medium
- 1 medium jalapeño pepper seeded, chopped finely
- 3 medium garlic cloves chopped
- 1 1/4 tsp kosher salt
- 1 tsp Ground Cumin
- 1 tsp Ground Corriander
- 1 tsp Dried Oregano
- 2 bay leaves
- 3 cups Chicken stock
- 1 1/2 cup cherry tomatoes for garnish
- 1/2 cup cilantro leaves for garnish
Instructions
- Rinse, drain and sort black beans, picking out any stones or broken beans. Set aside.
- Set Instant Pot to sauté. Allow to heat for 3 minutes. Add olive oil, onion, peppers, garlic, salt, cumin, coriander, and oregano. Cook stirring often until vegetables are slightly tender, 5 minutes. Add bay leaves, stock and beans, stir to blend.
- Set Instant Pot to pressure for 45 minutes. When cook time has ended, allow pressure to naturally release for 20 minutes. Release any remaining pressure, uncover and turn off pot.
- Serve with chopped tomatoes and cilantro.
