Cranberry-Pecan Conserve

Ingredients
  

  • 1.5 cups Sugar
  • .5 cups fresh orange juice
  • .25 cups water
  • 1 Tbsp grated orange peel
  • .5 tsp Fresh Ginger grated and peeled
  • 4 cups fresh cranberries
  • .5 cup pecans toasted and chopped

Instructions
 

  • Bring sugar, water, orange juice, grated orange peel and ginger to a simmer in a heavy sauce pan over medium heat, stirring until sugar disolves.
  • Add cranberries and cook until berries pop, stirring occasionally, about 5 minutes.
  • Remove from heat and stir in pecans. Pour into bowl. Cool, cover and refrigerate until well chilled.

Notes

Can be prepared four days ahead. Makes about 3 cups.
